Every year the vineyard battles against nature in order to produce highly concentrated, powerful wines with a flinty, mineral character true to the quartz rock in which it is grown. Monumental human effort was required to plant the vines. Implements destroyed, and, in the case of the older vineyards, dynamite deployed. A true expression of the site’s terroir, this wine will drink well now, or can be enjoyed in the next 2-3 years.
In order to achieve a luscious, juicy wine, we try to have as little intervention in the cellar as possible. The result is a velvety wine with softer tannins and classical varietal characteristics. This traditional wine is unfiltered and unfined, which may deposit sediment and might require decanting.
This is a wine that I, Fanus Bruwer, make for myself to drink because I love a good Rose in summer. The wine is pale pink onionskin in color. Red Berries and cassis on the nose follow through with a juicy fruitiness on the palate and elegant acidity.
The grapes for this wine were hand harvested from vineyards in Paarl and Stellenbosch. The wine was fermented in open and closed fermenters with regular punch downs and pump-overs to ensure upfront fruit and soft extraction. It spent 10 months in 3rd and 4th fill barrels with a portion of the blend remaining unoaked. The perfect partner to slow cooked casseroles, fillet, pastas, robust cheeses or a good old fashioned barbeque.
The wine is elegant, with a mineral soul. Fine citrus tinged flavours with hints of orange peel and lime. To celebrate special occasions, but also with a light summer lunch, with fish dishes or just enjoy as an aperitif.
Although there remains some youthful greenness, the bouquet of this full-bodied wine suggests tremendously ripe fruit, reminiscent of spicy plum jam. Ripe, sweet-fruited nose with loads of berry fruit, pepper and vanilla with subtle hints of karoo bos. Full rounded mouth adds plum to all that the nose suggested.
Smoke and spice develop as the glass stands. Rounded tannins make for very easy drinking even at this early age but will develop with great benefit over 4/5 years. This wine should benefit from further maturation
Good food wine, especially rich stews and winter food. It is ideal with spiced game casseroles, stuffed roast pork of lamb or pickled tongue.
It was our desire to produce a Bordeaux Blend and so we planted the classic varieties of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. These vines were planted on carefully selected sites and took 9 years to reach maturity. The grapes were fermented whole with native yeasts and left for 5 weeks on their skins. The wine was then barrel aged for two years followed by four years of bottle maturation.

Wild Yeast Chardonnay is fermented using the native, wild yeasts that occur naturally on the skins of the grapes. Unwooded, it is fermented in underground cement tanks in a slow, volatile process that can take anywhere between 6 to 9 months. This method, although risky, results in incredibly expressive wine with a wisdom that is unattainable in wines made using commercial yeasts.
