Sarah’s Creek Merlot is a varietal that ripens earlier and needs special attention to assure good quality wines. Green flavor and tannins are minimized by strict canopy management and bunch thinning. These practices, together with terroir selection, bring through the blackcurrant and red fruit characters in the wine. On the nose, this wine will show hints of ripe cherry characters, backed up by smoky coffee and spice notes, The palate is soft, yet has a good structure for medium-term aging.
Sarah’s Creek Merlot Grapes are harvested by hand for greater quality control. The grapes are immediately destemmed, but not crushed. Fermentation took place in stainless steel tanks for a period of 15 days at controlled temperatures. Aerated racking was done twice daily to ensure clean fermentation and soft tannins. Grapes were gently pressed in a bladder press, after which malolactic fermentation was completed in the tank.
