The Chenin Blanc were harvested fully ripe at 24 Balling by hand , cooled down to 10 degrees Celsius , crushed, only free run juice used and innoculated with yeast to ferment. VIN 13 / NT 116 yeast co innoculation to ferment. The Viognier were harvested two weeks later and the free run juice aded to the fermenting Chenin blanc must Fermented at 16 degrees Centigrade , 6 weeks to complete fermentation Post fermentationt the wine spent 3 months on it’s thick lees with low sulphur at 9 degrees Centigrade.R73.00
This vintage of the Rietvallei White EstÃ©anna 2012 is a blend of 61% Sauvignon Blanc, 26% Chardonnay, 11% Chenin Blanc and 2% Viognier. The 2016 harvest was significantly smaller than the past three vintages. The harvest was a challenge for both viticulturists and winemakers as it was one of the driest growing seasons. Winemakers were faced with lower sugar and acid levels which called for innovative winemaking techniques to produce high quality wine. The smaller crop did however result in the formation of smaller berries with a higher concentration of flavours and colour. Overall the wines are showing exceptional flavour and good structure with a fresh, crisp finish.
The grapes were harvested at 22Â° Balling and picking was done in the early morning hours to ensure the grapes arrived cool at the cellar. Dry ice and sulpher was added prior to transport to protect the grapes from oxidation. No skin contact was given and the free run juice was separated from the press juice. Reductive winemaking practices were followed to retain as much flavour and complexity in the wine as possible. 30% of the Chenin blanc was fermented in stainless steel tanks, the juice was inoculated and fermentation temperature was kept at around 12Â°C for 3 weeks. 70% of the Chenin blanc underwent barrel fermentation in 100% first fill 500L untoasted Sylvain French Oak barrels, Laffortâ€™s X5 yeast was used. The barrels were rolled once daily after fermentation followed by once a month for four months. The wines was matured in the barrels for four months before being blended and bottled.R109.00

The Chenin Blanc grapes where hand selected and harvested during harvest time to ensure that only the best grapes were picked for optimal ripeness and flavors. The grapes were crushed and destalked followed by 6 hours of skin-contact. Only the A grade juice were used during pressing to minimize any negative flavors and tannins. Fermented at 14-15 deg in stainless steel tanks to give the wine a perfect tropical flavors and aromas. The whole process takes place under CO2 protection.R50.00
