This traditional wine is unfiltered and unfined, which may deposit sediment and might require decanting.

  • The grapes for this wine were hand harvested from vineyards in Paarl and Stellenbosch. The wine was fermented in open and closed fermenters with regular punch downs and pump-overs to ensure upfront fruit and soft extraction. It spent 10 months in 3rd and 4th fill barrels with a portion of the blend remaining unoaked. The perfect partner to slow cooked casseroles, fillet, pastas, robust cheeses or a good old fashioned barbeque.

  • Although there remains some youthful greenness, the bouquet of this full-bodied wine suggests tremendously ripe fruit, reminiscent of spicy plum jam. Ripe, sweet-fruited nose with loads of berry fruit, pepper and vanilla with subtle hints of karoo bos. Full rounded mouth adds plum to all that the nose suggested.

    Smoke and spice develop as the glass stands. Rounded tannins make for very easy drinking even at this early age but will develop with great benefit over 4/5 years. This wine should benefit from further maturation

    Good food wine, especially rich stews and winter food. It is ideal with spiced game casseroles, stuffed roast pork of lamb or pickled tongue.

  • Springfield Work Of Time Wine Platform 62

    It was our desire to produce a Bordeaux Blend and so we planted the classic varieties of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. These vines were planted on carefully selected sites and took 9 years to reach maturity. The grapes were fermented whole with native yeasts and left for 5 weeks on their skins. The wine was then barrel aged for two years followed by four years of bottle maturation.

  • The fruit for this wine was sourced from our Stellenbosch vineyards. The grapes were handpicked at optimum ripeness and fermented in varying methods of punch down, submerged cap and aerated pump-overs for optimum structure and complexity. It spent 15 months in a combination of 90% French and 10% American oak (1st, 2nd and 3rd fill) barrels. On the nose expect notes of red berries, sweet spices and hints of white pepper. The palate is well balanced and layered with mulberry and black cherry fruit complemented by a spicy freshness. A rich ripe wine with silky tannins, an appealing piquancy and a long, lingering finish.

  • This 100% Cabernet Sauvignon was crafted from a selection of prime Cabernet Sauvignon vineyards from our Robertson Estate including a site located on the South-East facing slope of the Rooiberg Mountain that incorporates the game reserve on the Graham Beck property. The vines are planted on red Karoo soil which is also home to the delicate, yet tough fynbos that the game feed on next to the vineyard. Once in the cellar, the fruit is destalked, gently crushed and fermented with 4 daily pump-overs to ensure maximum extraction.

     

    Once dry, the juice is pressed and transferred into 2nd fill French and American Oak for malolactic fermentation in barrel. The wine is then kept for a further 9 months of maturation in barrel to gain complexity and a full mouthfeel. Great complexity of black berry fruit, dark chocolate and plums on the nose. This wine has a rich, juicy entry supported by firm tannins. An elegant creamy palate leads to a long lingering finish.
