Grapes are harvested by hand for great erquality control . After destemming the grapes were transferred to tanks overnight .
The next morning we â€œbl edâ€ of f 5% of t he juice from the Cabernet , and t his juice was fermented with wild yeasts.
After fermentation the wine was blended with a small percentage of Sauvignon Blanc.
This wine has an explosive nose of chocolate, espresso,Â fruitcake and sweet oak spice. The palate is richÂ and very soft, with ripe flavours of black cherries and a long rich aftertaste.
Calling Card: Rich, ripe and complex.
Why Paddock? Vines are planted on old horse paddocks,Â giving the wine a unique flavour spectrum.Â Appearance: Deep brick red on rim of glass, almostÂ black in centre.Â Nose: Smoked meat, mocha, toffee and spicy newÂ wood on nose.Â Palate: Lingering flavours of vanilla and ripe blackÂ cherries with a long and smooth finish.
Tasting Note Appearance:Dark, ruby colour Nose: Sweet violet, blackberry fruits and on the nose. Palate: Succulent flavours of ripe plum and blackcurrant, enhanced by hints of coffee and chocolate. Soft tannins lend a firm structure.
