From home grapes, whole-bunch-fermented (giving a stalky note and responsible I’d guess for the slightly drying tannins); unfiltered. Peppery, spicy and with none of the sweetness that troubled me a bit in the SMV. Interesting wine which will benefit from a good few years in bottle. Just 248 bottles were made.
The wine displays an array of fruit flavours especially white stone fruits. The wine was made to be enjoyed at release, but should last for up to 3 years after release. Asylum is ideal to be enjoyed chilled on its own at lunchtime and will go well if paired with salads, seafood, pork, dishes made with creamy sauces, tomato based dishes and cheeses.
The wine is full bodied with herbaceous â€˜veldâ€™, spice, pepper, bright red
summer fruit and plum flavours. The wine was made to be enjoyed at
release, but should only improve with age for up to 8 years after release. The
wine is ideal to be enjoyed on its own in winter or slightly chilled in summer
evenings and will go well with strong cheese, lamb or game dishes.
The 2013 vintage was picked earlier than 2012 and this resulted in a more
elegant wine with lovely pure floral and fruit flavours like melon, white peach,
pear and apricot on the nose. The relatively high acidity keeps the wine fresh.
We believe that it can be enjoyed on its own or with white meat, roast pork,
cream based dishes or a variety of seafood dishes.
